As I mentioned last week, over the next few weeks I’m going to be sharing some of my all-time favorite quinoa recipes. Some are new, sold are very old… but they’re all tasty.

To kick it off is a recipe that I recently created out of desperation — I was low on food and, scrounging through my cabinets, came up with the recipe. It was delicious — truly a treat.  It weds the smoky flavor of smoked paprika (one of my favs!) with the saltiness of pecorino cheese.


1 c quinoa, rinsed well in a mesh strainer
4 c water
1 tsp smoked paprika
1 tsp olive oil
1/4 c pecorino cheese, grated

In a large pot, bring water to boil and add quinoa. Reduce to simmer, cover and cook for 12-15 minutes until done.  Drain all extra liquid and add paprika, olive oil, and cheese. Stir until cheese is melted. Salt and pepper to taste. Enjoy!
