I’m an avocado devotee. I use it in, well, whatever meals I can. Avocado works its way into my lunches, dinners, snacks, but also my desserts and morning smoothies!
I love its creamy texture. I love the way it fills me up with healthy fats, fueling my workouts and giving me lasting energy throughout the day. But mostly, I love it’s heavenly, melt-in-your-mouth taste and texture.
As I mentioned in a recent post about my new discovery of avocado oil, the health benefits of the avocado are a’plenty. Avocados have been shown to help reduce cholesterol and boost heart health (much like olive oil). They’re high in vitamin E, and studies show that adding healthy fats, like avocado, to our daily diets actually help us lose fat in our bodies!
Avocado finds its way into the following foods for me, and I suggest you give some of these yummy, healthy meals a try. And if you have a fun way of using avocado at home that I haven’t mentioned, please share it with us!
½ of an avocado sprinkled with lemon juice and sea salt. The perfect snack.
Chopped avocado sprinkled on thick soups (works great with chili)
Sliced avocado alongside scrambled eggs in the morning, for additional filling power. Even better: put the eggs, avocado, and salsa into a sprouted wheat wrap for the breakfast of champions! Extra credit if you put beans and/or dark greens in there, too.
Add ½ of an avocado to your morning smoothie for an extra creamy, hearty start to your day.
Take sliced avocado and smoked salmon and wrap in lettuce leaves for a tasty snack or light meal. Other yummy additions: sliced red onions, herbed mayo, and capers.
Slice avocado in half and fill with salad of your choice: egg salad, shrimp salad, bean salad, whatev.
Mashed avocado with sea salt and a squeeze of lemon, spread on multigrain toast. Total heaven requiring about 2 minutes of work.
