I get very excited every time winter rolls around and it’s time for butternut squash! It’s the perfect winter vegetable — hearty and filling. Plus, it packs a ton of vitamins and nutrients. My favorite part is that it’s a sweet vegetable, so it’s great for people who have intense sugar cravings. For my clients who are always fiending after chocolate or cupcakes, I advise them to add some sweet vegetables (also includes swete potatoes, carrots, parsnips) into their diet, which generally helps decrease the cravings.
With that in mind, I present you with… Perfect Roasted Butternut Squash
1 butternut squash, cut into 2-3in cubes (you can also buy it pre-cut at most stores)
1-2 tbsp olive oil
1 tbsp smoke paprika
1 tsp ground chipotle
Salt to taste
Preheat oven to 400 degrees. In a large baking pan, mix all ingredients together until well coated. Roast for 30-35 minutes, or until very tender and slightly browned on one edge. Cool slightly and enjoy!
